“A refreshing salad livened by the flavors of fresh fruit, almonds,
whipped cream and coconut. Serve it for dessert too!”

INGREDIENTS

 

  • 1 (15 ounce) can crushed pineapple, drained
  • 1/2 cup sliced strawberries
  • 1/4 cup sliced fresh peaches
  • 1 cup uncooked white rice
  • 1/3 cup golden raisins
  • 2/3 cup flaked coconut
  • 5/8 cup heavy whipping cream
  • 2 tablespoons white sugar
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon ground ginger
  • 1 pinch salt
  • 1/4 cup slivered almonds
  • 12 leaves lettuce
  • 1/4 cup sliced almonds

  • 1 (15 ounce) can crushed pineapple, drained
  • 85 g sliced strawberries
  • 40 g sliced fresh peaches
  • 185 g uncooked white rice
  • 50 g golden raisins
  • 50 g flaked coconut
  • 150 ml heavy whipping cream
  • 25 g white sugar
  • 1 ml vanilla extract
  • 0.2 g ground ginger
  • 1 g salt
  • 25 g slivered almonds
  • 120 g lettuce
  • 35 g sliced almonds


DIRECTIONS

  1. In a saucepan bring salted water to a boil. Add rice, reduce heat to
    low, cover and simmer–without stirring–for 20 minutes. Remove from
    heat and chill until cold.
  2. In a medium bowl, mix together pineapple, strawberries, peaches, a
    heaping cup of the cold rice, raisins and coconut. Set aside.
  3. In a separate large bowl, whip together cream, sugar, vanilla, ginger
    and salt until stiff. Fold in rice mixture, and stir in 1/4 cup
    slivered almonds.
  4. Spoon mixture onto lettuce leaf beds, and sprinkle each portion with
    1/4 cup sliced almonds.

  6. Howdy this is somewhat of off topic but I was wondering if blogs use WYSIWYG editors or if you have to manually code with HTML. I’m starting a blog soon but have no coding know-how so I wanted to get advice from someone with experience. Any help would be greatly appreciated!
